Crock-Pot Apple & Onion Pork Chops

Servings: 4
Prep time: 10 minutes
Cook time: 3–4 hours on LOW

Ingredients

  • 4 thick-cut pork chops, about 1 inch thick
  • 2 apples, cored and thickly sliced
  • 1 medium onion, sliced
  • ½ cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 1 tablespoon cornstarch mixed with 1 tablespoon cold water

Instructions

  1. Layer the apples and onions. Place the sliced onions and apples in the bottom of your Crock-Pot.
  2. Season the pork chops. Sprinkle the chops with garlic powder, thyme, salt, and pepper. Place them over the apples and onions.
  3. Add the broth. Stir the brown sugar into the chicken broth, then pour it around the pork chops.
  4. Let dinner cook. Cover and cook on LOW for 3–4 hours. Start checking at 3 hours; the pork chops are ready when the center reaches 145°F.
  5. Rest the pork chops. Remove the chops and let them rest for at least 3 minutes before serving.
  6. Thicken the sauce, if desired. Stir the cornstarch and cold water mixture into the cooking liquid. Cover and cook on HIGH for 10–15 minutes, or until thickened.

What to Serve Alongside

Mashed potatoes are perfect for catching the apple-and-onion sauce, and green beans round out the meal with an easy vegetable side. Spoon the warm apples, onions, and sauce over the pork chops just before serving.

A Few Simple Tips

  • Choose thick-cut chops. Thinner pork chops cook faster and can dry out, so stick with chops about 1 inch thick.
  • Slice the apples thickly. This helps them hold their shape as they cook.
  • Check early. Slow cookers vary, so use a meat thermometer starting at the 3-hour mark to avoid overcooking.

A homemade dinner doesn’t have to mean a long evening in the kitchen. Sometimes a few simple ingredients and a little planning are all you need to make home feel extra cozy.
