Does anyone else feel like figuring out what’s for dinner is half the battle?
That’s exactly why I love putting these meal plans together. Instead of standing in front of the refrigerator at 5:30 wondering what sounds good, here are seven dinners already planned for you — plus something sweet.
I mixed things up this week and pulled several different recipes from my recipe collection, including some brand-new ones.

Monday: Garlic Butter Sausage & Potato Skillet
Let’s start the week with something easy — and only one skillet to wash.
Smoked sausage and baby potatoes cook together with butter, fresh garlic and Italian seasoning, then get finished with Parmesan and parsley.
It’s hearty enough to serve on its own, or add a simple green salad or vegetable on the side.
Best part? Dinner is on the table in about 35 minutes.
Tuesday: BBQ Chicken Flatbread Pizzas
Tuesday is pizza night, but we’re skipping the pizza dough.
Naan or flatbread gets topped with BBQ chicken, mozzarella and cheddar, then baked until everything is hot, bubbly and crispy around the edges.
You can add red onion, bacon, jalapeños, pineapple or whatever your family likes.
This would also be a fun one to let everyone build their own.
Wednesday: Slow Cooker Steak and Gravy
Midweek feels like a good time to let the slow cooker handle dinner.
Tender steak cooks low and slow with onions, bell peppers and a rich savory gravy until it practically falls apart with a fork.
Serve it over mashed potatoes, egg noodles or rice.
Get it going earlier in the day and Wednesday dinner is basically waiting for you.
Thursday: Cheesy Chicken & Broccoli Rice Bake
This is one of those dinners made for a busy night.
Chicken, rice, broccoli, creamy chicken soup and cheddar cheese all go into one casserole.
It only takes about 10 minutes to put together, and it’s also a great way to use leftover chicken or grab a rotisserie chicken and make things even easier.
Chicken, vegetable, rice and cheese all in one dish — done.
Friday: 4-Ingredient Cheesy Kielbasa Bake
By Friday, four ingredients sounds pretty good to me.
Smoked kielbasa, potatoes, cream of mushroom soup and plenty of melted cheese come together in an easy casserole that is pure comfort food.
Add a salad, green beans or broccoli on the side and call dinner done.
This is also a great one when you really don’t feel like doing much prep.
Saturday: Baked Chicken Alfredo Roll-Ups
Saturday gets something a little more fun.
Lasagna noodles are filled with shredded chicken, creamy Alfredo sauce and mozzarella, rolled up, covered with even more Alfredo and cheese, and baked until bubbly.
Think chicken Alfredo meets lasagna.
Serve these with a big salad, steamed broccoli or asparagus and some garlic bread.
Sunday: Crock Pot Italian Chicken
Sunday dinner without spending Sunday in the kitchen.
Chicken slow cooks with Italian seasoning, cream cheese and chicken broth until it’s tender enough to shred. Serve the creamy chicken over penne pasta and dinner is ready.
Add broccoli, green beans or a Caesar salad on the side.
This is exactly the kind of Sunday dinner I like — comforting without a lot of work.
And Now for Something Sweet
Cinnamon Roll Apple Cobbler
This one might be dangerously easy.
Refrigerated cinnamon rolls and apple pie filling bake together with butter and cinnamon, and then the whole thing gets drizzled with the cinnamon roll icing while it’s still warm.
That’s it.
Serve it warm as-is, or add a scoop of vanilla ice cream.
And with fall getting closer here in Spokane, warm apples and cinnamon are starting to sound pretty good.

Hopefully that means a little less time figuring out what to make this week and a little more time actually enjoying dinner.
