One-Skillet Pork Chops with Mushroom Gravy

One-Skillet Pork Chops with Mushroom Gravy: Simple Comfort Food

Some dinners just sound good after a long day. Pork chops with warm mushroom gravy are one of those meals, especially when you can make the whole main dish in one skillet.

The chops get a quick sear, then mushrooms and onions cook in the same pan. A little flour and broth turn those browned bits into a savory gravy, and the pork finishes gently in the sauce.

Serve everything over mashed potatoes or egg noodles and you have a cozy dinner made with familiar ingredients.

Why This Dinner Works

  • One skillet handles the pork and gravy.
  • There is no canned cream soup needed.
  • A thermometer helps keep the pork juicy.

Recipe at a Glance

Servings: 4
Prep: 10 minutes
Cook: 25–30 minutes
Total: About 40 minutes

Ingredients

  • 4 boneless pork chops, about ¾ inch thick and 5–6 ounces each
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 1 small yellow onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • Optional: chopped parsley
  • For serving, if desired: mashed potatoes or cooked egg noodles

How to Make It

  1. Pat the chops dry. Season with salt, pepper, and garlic powder.
  2. Heat the oil in a large skillet over medium-high heat. Sear the chops for about 2 minutes per side, until browned. Transfer to a plate; they will finish cooking later.
  3. Reduce the heat to medium and add the butter, mushrooms, and onion. Cook for 6–8 minutes, stirring occasionally, until softened and lightly browned.
  4. Add the garlic and cook for 30 seconds. Sprinkle in the flour and stir for 1 minute.
  5. Slowly add the broth while stirring. Add the Worcestershire sauce and thyme. Bring to a gentle simmer and cook for 2–3 minutes.
  6. Return the chops and any juices to the skillet. Reduce the heat to medium-low. Simmer gently for about 3–6 minutes, turning once, until the center of each chop reaches 145°F. Thicker chops may need longer; check early to avoid overcooking.
  7. Transfer the pork to a plate and let rest for at least 3 minutes. Meanwhile, simmer the gravy if it needs thickening, or add a splash of broth if too thick. Taste and adjust seasoning.
  8. Spoon the gravy over the pork and your chosen side. Add parsley, if using.

What to Serve with It

Mashed potatoes or egg noodles catch the gravy nicely. Add steamed broccoli, peas, or roasted carrots for a simple vegetable side.

A Simple Tip

Buy chops of similar thickness so they finish at about the same time. The thermometer is more useful than the clock for knowing when each one is ready.
