Sausage, Peppers and Onion Sandwiches Recipe

Prep time: About 10 minutes
Cook time: About 25 minutes
Servings: 4

Ingredients

  • 4 Italian sausages
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • ½ cup marinara sauce
  • 4 hoagie rolls

Directions

  1. Brown the sausages in a skillet over medium heat, turning to brown all sides. Transfer them to a plate; they will finish cooking later.
  2. Add the olive oil, sliced peppers, and onion to the skillet. Cook, stirring occasionally, until the vegetables are soft.
  3. Return the sausages to the skillet and add the marinara sauce. Cover and simmer until the sausages reach 160°F in the center.
  4. Toast the hoagie rolls, then fill each with a sausage, peppers, onions, and a spoonful of sauce.

Quick tip: Spoon the sauce onto the filling just before serving to help the toasted rolls stay firm.

These sandwiches are hearty on their own, or you can serve them with a simple side salad or chips.
