Ingredients
- 2 lbs boneless chicken thighs or chicken breasts
- 1½ lbs baby potatoes
- 3 carrots, chopped
- ⅓ cup honey
- ⅓ cup soy sauce
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon black pepper
Directions
- Add the chicken to the bottom of your slow cooker. Arrange the baby potatoes and chopped carrots around the chicken.
- In a small bowl, whisk together the honey, soy sauce, minced garlic, Italian seasoning, and black pepper.
- Pour the honey garlic sauce evenly over the chicken and vegetables.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and the potatoes and carrots are tender.
- Before serving, spoon some of the warm honey garlic sauce from the bottom of the slow cooker over the chicken and vegetables.
- Serve warm and enjoy!
