Oven-Baked BBQ Chicken & Cheesy Potatoes

Oven-Baked BBQ Chicken & Cheesy Potatoes

If you’re looking for an easy family dinner with plenty of flavor and minimal cleanup, this Oven-Baked BBQ Chicken & Cheesy Potatoes recipe is one to save.

Tender BBQ chicken and seasoned potatoes bake together in one dish before the potatoes get covered with melted cheddar cheese. It’s simple, hearty, and made with ingredients you can easily find at the grocery store.

With just 15 minutes of prep, this is a great dinner for busy weeknights when you want something homemade without making several different dishes.

Prep Time: 15 minutes
Bake Time: 45–50 minutes
Serves: 6

Ingredients

  • 1½ lbs chicken breasts or thighs
  • 1½ lbs potatoes, cut into small cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • ¾ cup BBQ sauce
  • 1½ cups shredded cheddar cheese
  • Sliced green onions, optional

Directions

  1. Preheat your oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Cut the potatoes into small, evenly sized cubes. Add them to a bowl and toss with the olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the seasoned potatoes evenly in the prepared baking dish.
  4. Bake the potatoes for 20 minutes. Giving them a head start helps ensure they’re tender by the time the chicken is finished cooking.
  5. Carefully remove the baking dish from the oven. Add the chicken to the dish and generously brush each piece with BBQ sauce.
  6. Return the dish to the oven and bake for another 20–25 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are fork-tender.
  7. Sprinkle the shredded cheddar cheese over the potatoes.
  8. Return the dish to the oven for approximately 5 minutes, or until the cheese is completely melted.
  9. Sprinkle sliced green onions over the top, if desired, and serve warm.

An Easy Dinner in One Dish

There’s a lot to love about a dinner that combines the main dish and side dish in one pan. The potatoes get crispy around the edges while staying tender inside, and the melted cheddar cheese makes them even better.

Pair them with juicy chicken covered in your favorite BBQ sauce, and you’ve got a simple dinner that doesn’t require a long list of ingredients or complicated steps.

Chicken Breasts or Thighs?

You can use either boneless chicken breasts or thighs for this recipe.

Chicken thighs tend to stay especially juicy in the oven, while chicken breasts are a great option if that’s what your family prefers. Cooking time can vary depending on the thickness of your chicken, so use an instant-read thermometer to make sure the thickest part reaches 165°F.

Make It Your Own

One of the easiest ways to change up this recipe is by using a different BBQ sauce. Try something sweet and smoky, honey BBQ, spicy, or tangy depending on what your family likes.

You can also switch up the cheese. Monterey Jack, Colby Jack, or a cheddar blend would all work well.

For a little extra flavor, finish everything with sliced green onions just before serving.

What to Serve With BBQ Chicken & Cheesy Potatoes

Since you’ve already got chicken and potatoes in one dish, you don’t need much else. Add a simple vegetable like green beans, corn, broccoli, or a side salad and dinner is done.

Quick Tip: Keep your potato cubes fairly small and uniform. Larger pieces may take longer to become tender, while evenly sized pieces will cook at about the same rate.
